The Residency at Brick and Mortar

The Brick and mortar Residency Program

Pullman Yards Chefs Market is proud to announce "Brick and Mortar", our new restaurant residency program, which will occupy the on-site restaurant space currently known as Dailies & Sides. 


An extension of our weekly Chefs Market, the new program will further the market’s vision by offering an incubator space for burgeoning chefs and culinary concepts, beginning with a first residency slated to debut on Saturday, August 10.


All previous and current participating food vendors at Pullman Yards’ Saturday and Sunday markets will automatically be eligible to apply. Residency selection will be determined by three evaluations, including: the vendor’s popularity among market visitors which will be assessed through an in-person voting system, their viability to act as a stand alone concept and their ability to execute. Concepts who are selected will open in the restaurant space for up to three months at a time – with doors open Wednesday through Sunday. 


Brick and Mortar will provide extensive support to its residents in all areas of operation including front-of-house and back-of-house staffing, marketing and promotional support and the development of a full beverage program, which will all be overseen by in-house culinary director and Salty Smiles founder, Alan Somphonephakdy, who has both successfully run pop-ups and has deep-rooted culinary experience across brick and mortar kitchens. 


In addition to the program, Brick and Mortar will maintain a standard menu available for all diners. Applications for residency are currently open, and all vendors interested in Chefs Market are encouraged to fill out the 2024 series application online.

Who can enter?

All food vendors are eligible to apply.


How often can I enter?

Vendors can apply as many times as they wish. The program will continue on a rolling basis.


When does the competition start?

The competition begins at Chefs Market on June 22nd.


When do we know the winners?

The winner of the residency program will be announced July 12th & 13th for our August residency.


Who can vote?

All Chefs market patrons are eligible to vote while on site for a market.


How many votes do I get?

Patrons will get one vote per market. 


How will I vote?

Qr codes will be posted on site to scan and place your vote.

Rules and Regulations

Overview

Pullman Yards Chef's Market vendors now have an exciting opportunity to transition from market stalls to a full-scale restaurant setting through our newest residency: Brick & Mortar! 

This residency will allow a weekly Chef's Market vendor to be selected for a three-month residency at our restaurant, Brick & Mortar, to develop their own menu and gain valuable experience in restaurant ownership.

Residency Structure

Eligibility:

  • Brick & Mortar Participation is open to food vendors who are actively participating in the Pullman Yards Chef's Market.
  • Vendors must comply with the Brick & Mortar licensing agreement and all applicable Federal, State and Municipal health and safety regulations.


Entry:

  • Each week Chef's Market vendors will be eligible to enter into the residency contest.
  • Vendors must submit a short application form detailing their concept, vision and menus for their residency if selected.


Voting Process:

  • Guests of the Chefs Market will have the opportunity to vote for their favorite food vendors at each market. 
  • Voting will be conducted through designated QR codes located at participating vendor booths or via QR code voting links located throughout the market.
  • At the end of each business quarter a vendor will be selected to be resident chef at Brick & Mortar pending management approval. 


Selection of Winner:

  • The winner will be selected based on a variety of variables including but not limited to, voting tallies, concept viability, marketability and business acumen.   
  • In the event of a voting tie, Pullman Yards and Brick & Mortar management will make the final decision.


Winner's Residency

Residency Duration:

  • Each winner will be given a residency of up to 3 months at Brick & Mortar
  • The residency period will be scheduled in advance and mutually agreed upon by the vendor and the management.
  • Service will take place Wed, Thurs, Sunday, 5 pm - 10 pm; Fri, Sat 5 pm - 11 pm


Responsibilities:

  • The chosen vendor will develop their own unique menu for the residency.
  • The vendor will be responsible for preparing and serving their dishes during operating hours.
  • Vendors are required to promote their Brick & Mortar experience through their own marketing channels and participate in B&M public relations campaigns


Support Provided:

  • Brick & Mortar will create and manage the bar menu to complement the resident dishes.
  • Brick & Mortar will provide servers, bartenders, and a food runner to support the vendor.
  • Limited restaurant operations consultation will be provided throughout the residency to assist vendors in polishing their brand and learn the ins and outs of restaurant ownership.

General Rules

Conduct:

  • Vendors must adhere to professional conduct and maintain high standards of food safety and customer service.
  • Any form of misconduct or violation of licensing agreement may result in disqualification.


Promotion and Branding:

Vendors are encouraged to engage in cross-promotion with Pullman Yards, Chef's Market and Brick & Mortar to maximize exposure.

*Use of Pullman Yards, Chef's Market and Brick & Mortar branding in promotional materials must be approved by management.


Feedback and Improvement:

  • Resident Chefs are expected to take customer and management feedback into consideration for continuous improvement.
  • Regular meetings with the Brick & Mortar management team will be conducted to review performance and address any issues.


Termination:

  • The residency may be terminated by management if the vendor fails to meet the required standards or breaches any terms of the licensing agreement.
  • Early termination will be discussed with the Resident Chef, and efforts will be made to resolve any issues before final decisions are made.

Past participants who have successfully transitioned to owning their own Brick & Mortar restaurants after participating in Pullman Yards’ incubation experience include Supremo, Kayaman, and Pho Cue.
